Rich, dark, minty chocolate brownies, in a sweet little Hershey’s kiss topped bite-sized package. Because who needs more than a bite when there are so many treats to choose from this holiday season?
I have a theory. If we make everything small and bite-sized, we can enjoy all the treats this holiday season without as much guilt.
Right?
Smaller things have less calories, and allow for more variety. It’s an easy holiday diet… eat everything in miniature!
Seriously though, I love tiny things. Tiny babies, tiny kittens, tiny candies, tiny brownies… Just ask my husband. Or my dad!
If you ever don’t know what to get me, think miniature. :o) It never fails to get an “Awwww… it’s so cute!” out of me!
(Maybe this is why I keep having babies??)
Ingredients
- 3/4 cup dutch-processed unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 2/3 cup butter, melted & divided (1/3 cup + 1/3 cup)
- 1/2 cup boiling water
- 2 cups sugar
- 2 large eggs
- 1 1/3 cups flour
- 1 teaspoon peppermint extract
- 1/2 teaspoon salt
- 1 1/2 cups semi-sweet or dark chocolate chips
- 1 bag Hershey's Mint Truffle Kisses, unwrapped
Directions
Preheat your oven to 350ºF. Line a 9×13″ glass baking dish with foil and generously grease the foil.
In a large mixing bowl, stir together the cocoa and baking soda. Stir in 1/3 cup of the melted butter until smooth. Stir in the boiling water until the mixture is smooth and thick.
Stir in the sugar and eggs with the remaining 1/3 cup melted butter.
Place the chocolate chips in a small bowl and sprinkle with 1 tablespoon of the flour, tossing to coat.
Into the chocolate mixture, stir in the remaining flour, extract & salt until just smooth. Stir in the flour-coated chocolate chips and spread the mixture evenly into your prepared baking dish.
Bake for 35-45 minutes, or until the edges start to pull away from the pan. (It’s always better to under-bake brownies than to over-bake them!)
As soon as you take the brownies out of the oven, press the Hershey's Kisses gently into the top. Cool completely and then cut into bite-sized squares!
