These oatmeal cookies are chewy, moist and delicious.
Packed with sweetened dried cranberries and laced with a trio of spices that really bring out the best in each other… these may not be the prettiest cookies you’ve ever seen, but they will be on of the tastiest!
Also, since they’re full of oatmeal, that means they’re breakfast, right?
(Confession: One of my favorite things ever is a straight-from-the-freezer cookie with my second cup of the morning coffee. Set the frozen cookie on top of the steaming hot mug of coffee for a few seconds to thaw it a bit. Dip occasionally as you nibble slowly. Mmmm….)
Ingredients
- 1 1/2 cups butter, melted & slightly cooled
- 1 cup flour
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ground cardamom
- 2 cups firmly packed brown sugar
- 1 cup sugar
- 2 large eggs
- 2 teaspoons pure vanilla extract
- 6 cups old fashioned rolled oats
- 3 cups dried cranberries
Directions
Melt the butter and set it in the fridge to cool back down a bit if you haven't already. Preheat the oven to 375ºF.
In a small bowl, stir together the flour, cinnamon, salt, baking soda, nutmeg & cardamom; set aside.
In a large mixer bowl, beat together the butter and sugars until light and fluffy, about 3-5 minutes. Beat in the egg & vanilla until smooth.
Mix in the small bowl of dry ingredients until just combined. Stir in the oats and cranberries until just mixed.
Place the dough in the fridge to chill for a few minutes while you line 4 baking sheets with parchment (and clean up your workspace!).
Scoop small 1 tablespoon balls of dough and roll into balls. Place them a couple inches apart as they will spread quite a bit.
Bake for 7-10 minutes, depending on your oven (check the first batch at 7 minutes and go from there!) until the cookies are just lightly golden brown around the edges. Remove from the oven and let cool a few minutes on the baking sheets before transferring to cooling racks
Store in an airtight container in the freezer if they don't get eaten right away!
