This chocolate is delicious, rich, decadent… and actually good for you! (No, I’m not just saying that!)
Coconut oil is packed full of healthy stuff, and so are unsweetened dark chocolate and raw almonds… 3 things this treat is packed full of! The cream cheese (I used reduced fat and it is delicious!) and pure almond extract just add to the package making this absolutely guilty-tasting.
But, instead of being loaded with sugar, it is sweetened with Xylitol! A lovely little sugar substitute that is much easier on your blood sugar and just as easy to use.
I would happily serve this treat to anyone, including sugar lovers, and not worry one bit that they would call me out on some weird non-sugar treat!
Ok, so, this morning I had a little mini-temper-tantrum about my goal of eating less sugar on a daily basis.
I was sick and tired (and not feeling well in the first place) and just plain fed up with trying to be healthy. I wanted to give up.
I told you… It was a temper-tantrum!
I was pouting, and grumbling, and I may have even been near tears. Thankfully, there was no one over 5 here to witness it.
Of course, I finally got over myself. I found some confidence that had been sadly smooshed away, and got back into the kitchen with new determination.
And for the first time in a long time, I came up with a great treat on the first try!! Yay! I’m back!!!

Ingredients
- 1/2 cup unsweetened cocoa powder
- 1 cup extra virgin coconut oil
- 1/4 cup xylitol, ground in a coffee grinder until powdery
- 2 oz (about 1/3 of an 8oz block) of cream cheese, softened (regular or reduced fat is fine!)
- 1 teaspoon pure almond extract
- 1/2 cup sliced almonds
- additional almonds for garnish, if desired
Directions
Stir together all the ingredients, except the almonds, until smooth. Taste for sweetness and add a bit more ground xylitol (or a few shakes of stevia) if you need it.
Stir in the sliced almonds until combined and then pour this mixture into a parchment-lined dish, or individual muffin tins.
Sprinkle the top with a few more sliced almonds for garnish and then place in the fridge or freezer to chill until firm.
** This chocolate will soften up quickly out of the fridge, so for best results store it in the fridge or freezer and enjoy quickly after removing! **
