Yes, I know it’s still August, but fall is coming soon, and you know what? I’m ready for it!
Don’t get me wrong, I have loved this beautiful, uncommonly warm northwest summer we have had, but also… I love fall. It is my favorite. Cool days, soft breezes, pretty trees, boots & jackets… and all things pumpkin!
I’m pretty sure I’ve never tasted a pumpkin-treat I didn’t like. And also, I have never had ‘too much’ pumpkin in my life. If you’re not a big pumpkin fan, I apologize in advance…

This pumpkin granola is sweet, crunchy and delightfully simple and delicious. Just oats and a whole bunch of flavor. Sure, you can add in seeds, nuts, and more, but sometimes simpler is better. The pumpkin flavor really shines here with just a hint of maple in the background.
Bring on the cozy, fall weather! (And Homemade Pumpkin Lattes!)
Ingredients
- 3/4 cup pumpkin purée
- 1/4 cup maple syrup
- 1/2 cup firmly packed brown sugar
- 1/2 cup sugar
- 2 tablespoons coconut oil, melted
- 1 tablespoon pumpkin pie spice
- 1 teaspoon salt
- 1 teaspoon pure vanilla extract
- 6 cups old fashioned rolled oats
Directions
Preheat the oven to 350ºF. Line a rimmed baking sheet with foil and grease lightly.
In a large bowl, whisk together all the ingredients except the oats, until smooth and well combined.
Stir in the oats until well coated and spread the mixture into an even layer on the lined baking sheet.
Bake for about 50-70 minutes, stirring about every 20 minutes, until nicely crisp and golden. Let cool completely before storing in an airtight container at room temperature.
