I am in love with these cookies. All the fun, festive, Christmasy-ness of decorated sugar cookies, withOUT all the fuss.
The perfect combination, if you ask me!
So, the other day, I decided to be all cookie-cutter Christmasy and bake some sugar cookies for my kids to decorate.
It was fun, until the cookies were done and it was time to let the kids loose.
I may have had a slight panic attack. Thankfully, my little guys’ attention spans are pretty short these days and they moved on fairly quickly after they filled up on sugar and decorated a few cookies each ‘for Santa’.
Navy kept frosting and decorating the rest (because I just couldn’t handle the… chaos of it!) and into the freezer they went to share with our family (and Santa, of course!) on Christmas Eve.
After I cleaned up the mess and took a few deep breaths, I realized, that is just not my thing. I am not gifted in crafting with kids. I am too OCD to handle the uncontrollableness of the activity.
So, I did my good deed for the year. My kids are thrilled. And now back to your regularly scheduled programming:
Non-chaotic, but just as fun, sprinkles-filled sugar cookies! Yum!
I think next year I will just let the kids pick out and dump in the sprinkles. Win/win, right? ;o)
Ingredients
- 2 1/2 cups flour
- 1/4 cup cornstarch
- 3/4 tsp baking soda
- 3/4 tsp salt
- 1 cup butter, softened
- 1 cup sugar
- 1/4 cup firmly packed brown sugar
- 1 large egg
- 1 tsp vanilla
- 1 tsp almond extract
- 1/2 cup festive-colored sprinkles
Directions
Preheat the oven to 375ºF. In a medium bowl, stir together the flour, cornstarch, baking soda & salt; Set aside.
In a large mixer bowl, cream together the butter and sugars until light and fluffy, about 3-5 minutes. Beat in the egg and extracts until well combined.
Mix in the flour mixture until just combined, and then gently stir in the sprinkles.
Scoop onto parchment-lined baking sheets and bake for 8-12 minutes (depending on size) until they are just barely golden brown around the edges.
