I am a sucker for fun marshmallows.  It’s the kid in me, I guess, but every time I see a new shape or flavor of marshmallow at the store, I just can’t resist bringing some home.

The peppermint ones I used are about the cutest I’ve seen.  Wider and flatter than regular marshmallows, they are perfect for this layered chocolate peppermint marshmallow treat.

If you can’t find them at your stores, use regular marshmallows, cut in half (to make 2 flatter circles), or mini marshmallows, and add 1/2 teaspoon of peppermint extract to your chocolate mixture.

You will get all the same flavor!

Ingredients

  • 2 cups milk chocolate chips
  • 2/3 cup semi-sweet or dark chocolate chips
  • 1/2 cup heavy cream
  • 2 tablespoons light corn syrup
  • 1 teaspoon pure vanilla extract
  • small pinch of salt
  • peppermint or regular marshmallows

Directions

Line an 8 or 9" square baking dish with parchment and grease the parchment; Set aside.

In a medium bowl, combine all the ingredients except for the marshmallows and microwave, 30 seconds at a time, stirring well each time, until just melted and smooth. (You can also do this on the stovetop in a pot over low heat.)

Pour about 1/3 of the chocolate mixture into your greased baking dish. Spread it out evenly.

Arrange the marshmallows all over the top of the chocolate mixture, close together. Feel free to cut a few to make them fit.

Pour the rest of the chocolate mixture over the top of the marshmallows, and smooth it out, tapping the pan firmly on the counter to help the chocolate settle into the cracks and release any air bubbles.

Place into the fridge to chill for at least an hour, or until the chocolate is set. Take back out and let it come to room temperature before cutting and serving, for best results!

Store in an airtight container in the fridge for up to a week. (Not that you even need to, it's so fast to throw together!)
