creamy sugar-free dark chocolate almond fudge

This chocolate is delicious, rich, decadent… and actually good for you! (No, I’m not just saying that!)

Sweet Anna's | creamy sugar-free dark chocolate almond fudge

Coconut oil is packed full of healthy stuff, and so are unsweetened dark chocolate and raw almonds… 3 things this treat is packed full of! The cream cheese (I used reduced fat and it is delicious!) and pure almond extract just add to the package making this absolutely guilty-tasting.

But, instead of being loaded with sugar, it is sweetened with Xylitol! A lovely little sugar substitute that is much easier on your blood sugar and just as easy to use.

I would happily serve this treat to anyone, including sugar lovers, and not worry one bit that they would call me out on some weird non-sugar treat!

low carb jalapeño popper mac and cheese

Jalapeño poppers + mac & cheese? All in one dish? And even low carb if you want it to be?!

I think I may have just died and gone to heaven.

Jalapeño poppers are one of my guilty pleasures. I could eat them every day, and sometimes I kind of do, by making my Jalapeño Popper Dip or Jalapeño Popper Grilled Cheese Sandwiches way more often than I should.

My waistline doesn’t thank me for those splurges though, so I was excited to find a way to make this treat low-carb, which fits into my lifestyle (and my waistline!) much better!

I have been enjoying the Trim Healthy Mama lifestyle lately and using low-carb noodles such as Dreamfields (and leaving off the bread crumb topping!) keep this meal very low carb (making it an “S” for you THMers reading this). So satisfying!

(No, I don’t eat low carb 100% of the time. That is the beauty of THM, but I won’t go into that right now. This is not an advertisement!)

If you like Jalapeño Poppers, I can pretty much guarantee that you will like this.

oven roasted curried cauliflower

Today was such a long day. It has been hot here in cold, rainy Washington… hot and muggy. Ok, warm and muggy, but we’re wimpy and all this mugginess just makes us grumpy.

So, of course all I want to do all day is run my a/c with all the doors and windows shut, which is glorious and refreshing and consequently makes me want to bake. Not sure what the correlation is, but hey… I’ll go with it!

Yesterday it was classic, perfectly chewy Chocolate Chip Cookies.

Today, roasted curried cauliflower.

We did our weekly Costco run today and I just about squealed when I saw bags of fresh cauliflower florets in the produce section.

I have been bemoaning the fact that they haven’t sold cauliflower because I pretty much only shop at Costco, and I have been seeing so many fun recipes around the web lately with cauliflower! (Cauliflower ‘rice’, cauliflower pizza crust, cauliflower tortillas, etc. etc.)
