I love baking cookies. There is not much more soothing to me than a batch of cookie dough whipped up to perfection in my mixer, or if I’m really needing to unwind… by hand.
I inherited that love from my Grandma who was known all over the country for her cookies. I’m pretty sure she baked cookies almost every day. Correct me if I’m wrong, family?
Anyways, I am absolutely head-over-heels for skillet cookies lately, in case you haven’t noticed!
All the soothing mixing, beating, measuring and creating, with only a fraction of the time and effort. No endless scooping and and cookie sheet switching. Bliss.
My family and I are all on a little healthy-eating kick for the next 3 weeks (28 days total… kind of a healing, whole foods thing, I’ll tell you all about it soon!) and I realized my stress level was rising the past few days because I haven’t been baking like usual.
So, the littles and I quickly changed that with this almost-healthy chocolate chip skillet cookie!
I’m pretty sure the boys have no idea I healthified their favorite cookies, but I sure feel a lot better serving these to them! (For the record, they are not on the diet with us exactly… no sugar for us, but I am allowing them some cheats!)
I’ve gotta say, I will be making these – healthy style – again!
Ingredients
- 1 cup firmly packed brown sugar
- 1/2 cup Wholesome Sweeteners coconut palm sugar*
- 1/2 cup butter, softened
- 1/2 cup organic coconut oil
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 2 1/4 cups whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 cups dark chocolate chips
Directions
Preheat the oven to 375ºF and grease a 12" cast iron skillet (or 9x13" baking dish) and set it aside.
*If you don't have coconut palm sugar (You should really try this stuff out though!), you can substitute organic sugar or additional brown sugar.
In a large mixing bowl, beat the sugars, butter & coconut oil until light and fluffy. Beat in the eggs and vanilla until smooth.
Mix in the flour, baking soda & salt until just combined and then stir in the chocolate chips.
Spread the dough into the prepared baking dish and bake for about 30 minutes, until golden brown around the edges. Let sit for about 10 minutes before cutting and serving!
