Ingredients
- 1/3 cup dutch processed cocoa powder
- 1 1/2 cups sifted cake flour
- 1 teaspoon baking soda
- 1 cup sugar
- 3/4 teaspoon salt
- 1 cup strong hot coffee
- 5 tablespoons good extra virgin olive oil
- 2 teaspoons pure vanilla extract
- 1 tablespoon balsamic vinegar
Directions
Preheat the oven to 400ºF. Use baking spray (with flour in it) or grease and flour a 9" round cake pan; Set aside.
In a large bowl, whisk together the cake flour, cocoa powder, baking soda, sugar and salt.
In another bowl, stir together the coffee, olive oil, vanilla and balsamic vinegar. Whisk the wet ingredients into the dry ingredients, until just mixed and free of lumps.
Spread the batter evenly into the prepared pan and bake until a toothpick inserted in the center comes out just clean, about 20-25 minutes.
Cool the cake in the pan until it's cool enough to handle and then gently turn it out onto a cake plate.
Serve with fresh whipped cream and caramel or chocolate sauce, if desired!
