I have been in a New-Year-healthy-eating-no-motivation-to-bake mood lately. Fortunately I think we’re past the worst of it.
That was a long week. ;o)
Seriously though, these blondies are worth breaking those resolutions for. So don’t make them unless you have friends to share them with! (Your co-workers or friends will love a little treat!)
Incredibly rich, deliciously gooey, peanut butter blondies full of dark chocolate chips and a luscious layer of toasted marshmallow goodness.
Yep. All those words in one yummy treat.
So, did you go preheat your oven yet?
Ingredients
- 1/2 cup butter, softened
- 1/2 cup creamy peanut butter
- 1 cup firmly packed brown sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 1/2 cups flour
- 1 1/2 cups chocolate chips
- 1 (7oz) container marshmallow fluff
Directions
Preheat the oven to 350ºF. Grease a 9x13"baking dish and set aside.
In a large mixer bowl, cream together the butter, peanut butter and sugar until light and fluffy. Beat in the eggs and vanilla until smooth.
Quickly beat in the baking powder and salt until smooth. Mix in the flour until just combined and then stir in the chocolate chips.
Spread the batter evenly in the baking dish and then dollop the marshmallow fluff evenly over the top and spread gently with the back of a spoon. It doesn't have to be perfect!
Bake for 35-40 minutes until golden and just set. (Always better to underbake than to overbake!)
