This might just be my new favorite cookie. And I don’t say that lightly.
It actually happened a little by accident, but it turned out to be the best accident I’ve had in a long time!
You see, I am a huge fan of chocolate and peanut butter together. Huge. I have worked for years to find the perfect peanut butter chocolate chip cookies and just kept falling a tiny bit short of the dream in my head.
I wanted a cookie that was moist, thick, and chewy, like my favorite chocolate chip cookies, but that was also laced with a lovely peanut butter punch. Not too overpowering, but definitely not hidden. Just… there.
I also have never been a fan of the hint of greasiness that sometimes comes out with peanut butter cookies.
So, when I found these cute peanut butter & milk chocolate chips at the store. I couldn’t resist grabbing a bag to continue my quest.
Unfortunately, when I got home I was distracted (hello, 3 kids under 5 years old!) and put too much butter in the mixer. It was too late to turn back, but I still really wanted peanut butter cookies.
Then, I remembered that random jar of powdered peanut butter (yes, I know it sounds weird, but it’s pretty much genius!) in my cupboard and decided to give it a try. Well, it worked!!
I was still skeptical as I mixed and stirred and scooped and baked, but when they were finally cool enough to taste… Oh my word. The best peanut butter chocolate chip cookies I have ever had. Yep. The best. Ever!
Also, I kindof really LOVE that I don’t have to dig into the peanut butter jar (and end up getting peanut butter all the way up to my elbow every time! Does anyone else have that problem?!) for these cookies.
The powdered peanut butter in the dough gives a beautiful grease-less peanut butter punch and the peanut butter chips are the perfect boost. Peanut butter chocolate heaven right here folks!
Do you like peanut butter and chocolate together? If so, I’d love it if you would test out my taste buds!
Are these the best peanut butter cookies you’ve had? Or do I still have work to do?!
Ingredients
- 4 1/4 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 1/2 cups butter, melted & slightly cooled
- 2 cups firmly packed brown sugar
- 1 cup sugar
- 2 tablespoons powdered peanut butter
- 2 large eggs
- 2 large egg yolks
- 1 tablespoon pure vanilla extract (yep, tablespoon!)
- 1 1/2 cups peanut butter & milk chocolate chips
- 1 1/2 cups dark chocolate chips
Directions
In a medium bowl, stir together the flour, baking soda and salt; Set aside.
In a large mixer bowl, cream together the slightly cooled melted butter, the sugars & the powdered peanut butter until light and fluffy (about 5 minutes!). Beat in the eggs, yolks and vanilla until smooth.
Mix in the flour mixture until just combined and then stir in the all the peanut butter & chocolate chips. Place the dough into the fridge to chill for about 30 minutes.
Preheat the oven to 350º. Line several baking sheets with parchment paper. When the 30 minutes are up, scoop out the dough onto the baking sheet with a medium scoop... Bake for about 8-10 minutes, until the cookies are just barely golden brown around the edges*.
*I always like to under-bake my cookies. I have never had a cookie that is too moist for my tastes, but I have had plenty of dry, overdone cookies in my life!
**Also, if you don't have any powdered peanut butter on hand, just leave it out. These will still be lovely chocolate chip cookies with peanut butter chips in them. Delicious, just a little less peanut buttery!
