I love fall so so much.  Every tiny little thing about it!  Of course, I especially look forward to the food…  and the eggnog!

As I sat there sipping my eggnog-laced coffee the other day, I couldn’t help but think about all the other ways I could possibly enjoy one of my favorite parts of the holiday season.

Eggnog lattes, and eggnog-latte sugar cookies…  eggnog-frosted nutmeg cookie logs and eggnog and coffee ice creams eaten at the same time

Have I mentioned I have a slight obsession with eggnog?

I have been thoroughly enjoying the early eggnog-latte season at all the local coffee shops this year.  The day eggnog leaves us for the year is always a sad day in my house!

So, naturally, I decided to take my favorite Slow Cooker Steel-Cut Oatmeal recipe and turned it into Eggnog Oatmeal.  Oh My Yum!!!  What a perfect breakfast!

coconut black-bottom cupcakes

I have been craving these black-bottom cupcakes for weeks now.  Maybe even months.

Here’s the thing.  I have had black-bottom cupcakes before.  I can’t remember when, but sometime, somewhere, in my life, I had black-bottom cupcakes.

I was not impressed.

I never thought of them again, until a year or two ago, when a friend made some and I tried one (because hey, I’m not rude!) and they were actually delicious!

chewy cranberry spice oatmeal cookies

These oatmeal cookies are chewy, moist and delicious.  

Packed with sweetened dried cranberries and laced with a trio of spices that really bring out the best in each other…  these may not be the prettiest cookies you’ve ever seen, but they will be on of the tastiest!

Also, since they’re full of oatmeal, that means they’re breakfast, right?

(Confession:  One of my favorite things ever is a straight-from-the-freezer cookie with my second cup of the morning coffee.  Set the frozen cookie on top of the steaming hot mug of coffee for a few seconds to thaw it a bit.  Dip occasionally as you nibble slowly.  Mmmm….)

Yield: makes 11+ dozen small cookies. (Recipe can be halved for a smaller batch!)

Ingredients

  • 1 1/2 cups butter, melted & slightly cooled
  • 1 cup flour
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ground cardamom
  • 2 cups firmly packed brown sugar
  • 1 cup sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 6 cups old fashioned rolled oats
  • 3 cups dried cranberries

Directions

Melt the butter and set it in the fridge to cool back down a bit if you haven't already. Preheat the oven to 375ºF.

In a small bowl, stir together the flour, cinnamon, salt, baking soda, nutmeg & cardamom; set aside.

In a large mixer bowl, beat together the butter and sugars until light and fluffy, about 3-5 minutes. Beat in the egg & vanilla until smooth.

Mix in the small bowl of dry ingredients until just combined. Stir in the oats and cranberries until just mixed.

Place the dough in the fridge to chill for a few minutes while you line 4 baking sheets with parchment (and clean up your workspace!).

Scoop small 1 tablespoon balls of dough and roll into balls. Place them a couple inches apart as they will spread quite a bit.

Bake for 7-10 minutes, depending on your oven (check the first batch at 7 minutes and go from there!) until the cookies are just lightly golden brown around the edges. Remove from the oven and let cool a few minutes on the baking sheets before transferring to cooling racks

Store in an airtight container in the freezer if they don't get eaten right away!

homemade pumpkin maple granola

It’s that time again!  Kids are heading back to school, leaves are slowly starting to turn, halloween costumes are taunting us at every turn…

Yes, I know it’s still August, but fall is coming soon, and you know what?  I’m ready for it!

Don’t get me wrong, I have loved this beautiful, uncommonly warm northwest summer we have had, but also… I love fall.  It is my favorite.  Cool days, soft breezes, pretty trees, boots & jackets…  and all things pumpkin!

creamy sugar-free dark chocolate almond fudge

This chocolate is delicious, rich, decadent…  and actually good for you!  (No, I’m not just saying that!)

Coconut oil is packed full of healthy stuff, and so are unsweetened dark chocolate and raw almonds…  3 things this treat is packed full of!  The cream cheese (I used reduced fat and it is delicious!) and pure almond extract just add to the package making this absolutely guilty-tasting.

But, instead of being loaded with sugar, it is sweetened with Xylitol!  A lovely little sugar substitute that is much easier on your blood sugar and just as easy to use.

I would happily serve this treat to anyone, including sugar lovers, and not worry one bit that they would call me out on some weird non-sugar treat!
